RTP is the real-time transport protocol commonly used to carry voice media packets during a VoIP call. See also the glossary and FAQ.
SRTP is the secure version of RTP. It can protect media packets with encryption and authentication where both sides support it.
SIP TLS protects the signaling path used to set up, modify and end a call. It does not by itself encrypt the media stream. See also the glossary and FAQ.
Signaling answers who is calling, where to route and when the session starts. Media is the voice payload exchanged during the active conversation.
